DESCRIPTION

Paul Wallace Crackerjack 2022 is produced from a blend of 45% Merlot, 27% Cabernet Franc, 17% Cabernet Sauvignon, and 11% Malbec. The Malbec and Cabernet Franc are from their Wallovale Elgin farm and the Merlot and Cabernet Sauvignon from another Elgin farmer with whom Paul has a direct involvement. Each parcel was harvested at optimum ripeness and vinified separately, with 14 days of skin maceration and 18 months in 225L French oak barriques completing malolactic fermentation before careful blending. Residual Sugar: 1.99g/l. Bottled at 13%. (Bottle size 750ml)

TASTING NOTES

Nose: Engaging and layered, with bright red and black currants, raspberries, and sundried tomatoes, interlaced with hints of cracked black peppercorn and subtle cocoa dust.

Palate: Rich and opulent, yet vibrant, with juicy red and black fruits dominating alongside gentle spice and hints of cedar and tobacco leaf.

Finish: Long and carrying, with integrated oak and fine tannins providing structure. Balanced acidity keeps the palate bright, while lingering notes of black forest cake, dark cherry, and a whisper of crushed pepper.
