Paul Wallace Reflection Chardonnay 2025 is a small-production, estate-grown Chardonnay from the cool-climate Elgin Valley. Produced from a 0.85-hectare, south-facing vineyard planted to CY95 Chardonnay on Bokkeveld shale soils, the grapes were hand-harvested on 18 February 2025 and whole-bunch pressed before fermentation in Burgundian oak barrels. The wine matured for 10 months in a combination of 300L and 500L barrels, with 18% new oak, while malolactic fermentation was limited to 20% to retain freshness and acidity. Bottled on 2 February 2026, production was limited to 2,450 bottles. Bottled at 12.5% ABV. (Bottle size 750ml)
Nose: Lemon and lime lead the aromatics, accompanied by passion fruit and brioche, with subtle struck-match reduction and a touch of vanilla.
Palate: Concentrated citrus fruit with bright acidity and underlying minerality, balanced by a delicate oak-derived sweetness. Good weight and texture provide breadth while retaining the freshness characteristic of Elgin Chardonnay.
Finish: Long, dry and focused, with persistent citrus, mineral notes and finely integrated oak.
