Desiderius Pongrácz is produced using the French time-honoured tradition of bottle fermentation. This Cap Classique is crafted from a blend of 70% Chardonnay and 30% Pinot Noir grapes, hand-picked from selected vineyard blocks in the Robertson, Stellenbosch, and Elgin regions. The grapes, harvested between 18-20° Balling in January 2013, yielded 9-10 tons/ha. After whole bunch pressing, the juice was settled overnight at 12°C. The clear juice was racked the next morning and inoculated with Prisse de Mousse yeast. The base wine underwent cold fermentation at 13-16°C and malolactic fermentation, followed by four months of maturation on the fine lees in clean stainless steel tanks. For the secondary fermentation, the wine was bottled at 15°C, essential for a quality Cap Classique. It was matured for a minimum of 69 months on the lees before the sediment was removed using traditional remuage and dégorgement methods. Presented in a uniquely-styled fluted bottle. Residual sugar: 6.37g/l. Bottled at 11.5%. (Bottle size 750ml)

Nose: The wine opens with inviting aromas of freshly baked brioche and toasted bread, complemented by crisp green apple and a hint of lemon zest. Delicate floral notes and a subtle touch of almond add a pleasing complexity.

Palate: On the palate, vibrant citrus and fresh orchard fruits mingle with a creamy, yeasty texture that brings warmth and depth.

Finish: Fine, persistent bubbles lift flavours of honeyed lemon and toasted brioche. Bright acidity heightens its refreshing, mineral character.
