Description:
Sourced from 24-year-old dry-land Shiraz vines rooted in deep clay-rich granite soils of the Swartland, this 2021 expression reflects both concentration and site-driven complexity. Harvested on 19 February at 24.7° Balling, the grapes were hand-picked, force-cooled, and meticulously sorted before a layered fermentation approach, combining destemmed, whole berry, and 10% whole-bunch components. Following a three-day cold soak, fermentation began naturally before being completed with selected yeasts, with regular punch-downs and pump-overs to build structure. The wine spent 20 months maturing in 50% new, 20% second-fill, and 30% third-fill 300L Allier French oak, with malolactic fermentation in barrel and extended lees contact. Residual Sugar 2.7 g/L. Bottled at 14.5% (Bottle size 750ml).
Nose: Deep and expressive, with aromas of blackberry, dark plum, and cassis layered with red cherry lift. Violet florals, dried herbs, and a touch of cracked pepper add aromatic intrigue, supported by subtle oak spice.
Palate: Full-bodied and structured, revealing dense dark fruit and savoury undertones with a polished, integrated oak framework. The texture is rich yet controlled, balancing power with precision.
Finish: Long and firm, where structured tannins provide grip and ageing potential, balanced by fresh acidity that keeps the wine composed. Lingering notes of spice, herbs, and dark fruit taper into a persistent, savoury close.
