A limited edition from Lochlea, a farm distillery in Ayrshire in the Lowlands, released as part of their seasonal series of four editions named after the stages of the farming year. Fallow is named for the period after harvest, when the fields rest. This is the 2nd Crop, released in late 2023. Made from barley grown on the Lochlea farm and matured exclusively in Oloroso sherry butts and Pedro Ximénez sherry casks, with a slightly greater proportion of PX. Non-chillfiltered, naturally coloured and bottled at 46%.
Nose: Manuka honey and golden syrup.
Palate: Spiced ginger candy and ground coffee.
Finish: Rich buttery sandalwood oils, crushed almonds.
