The flagship expression from Kweichow Moutai in Moutai Town, Guizhou Province, and the benchmark for sauce-aroma (jiangxiang) baijiu. The Flying Fairy (Feitian) label, showing two flying celestial figures, was introduced in 1958 for export markets and is now the brand’s best-known presentation. It is made from locally grown glutinous sorghum and wheat in the Chishui River basin. Over a one-year production cycle, the grain is steamed nine times, fermented eight times and distilled seven times. The spirit then spends several years in clay jars before blending, a process that takes around five years from grain to bottle. Bottled at 53%. (Bottle size 500ml)
Nose: Complex and aromatic, with roasted grains, fermented yeast and toasted sesame, followed by delicate floral notes, ripe pear, plum and honey. Subtle earthy and savoury aromas develop with time
>Palate: Rich and full-bodied, with a rounded texture and an interplay of sweet and savoury flavours. Roasted cereals, toasted nuts and ripe fruit are complemented by hints of soy sauce, earthy mushrooms and gentle spice.
Finish: Exceptionally persistent and warming, with lingering roasted grain, savoury umami and delicate fruit sweetness. The characteristic Jiangxiang fragrance remains long after the spirit has been consumed.
