Released in 2021 as part of the Milk & Honey Apex Series. Distilled on 13 July 2017, matured in ex-bourbon casks and finished in fortified style pomegranate wine casks from Rimon Winery (an Israeli winery specialising in producing pomegranate wine) for a period of six months before being bottled on 11 October 2020. Only 1,912 bottles were produced. Non-chillfiltered, naturally coloured and bottled at a natural cask strength of 60.3%. (Bottle size 750ml)

Nose: Ripe pomegranate, followed by a swirl of rich vanilla, roasted coffee and butterscotch. Strong earthiness, accompanied by notes of orris root, spearmint and freshly baked sour apple.

Palate: Juicy, with crushed pomegranate grains, dried figs and a bouquet of spicy-sour herbs.

Finish: Long and dry, with a hint of toasted oak, followed by sourdough pretzels with a side of red fruits.

Exceeding Expectations

"This is quite a complex whisky. And it's only three years old. That alone should make you start to question what you think the norms and possibilities around cask maturation are. This whisky does things. Like delivering a bouquet of dried fruit, oranges and spice well complemented by dark chocolate covered Turkish delight and sweet and sour fruit on the palate, with an excellent chilli pepper catch at the end. I've had similar experiences with Scotch Whiskies, aged in a combination of casks between 14 and 24 years old, but this delivers it even more intensely because of the abv and is almost as complex. I know the climate and angel's share is much more severe in Tel Aviv, but if they ever found a way to mature casks for a couple of decades, it would easily be some of the best whisky in the entire world."

"Great so see new distilleries making whisky the traditional way but adding their own twist! The pomegranate casks adds notes of strawberries, turkish delight, coconut and dried pineapple. Just superb... oh and don't worry about the high alcohol, you can't even tell!"

Earned My Respect

"We doubt whisky from non-whisky countries for good reasons. This might be from Israel but this team certainly know what they are doing. Very well crafted whisky. I'd love to taste the new make, the quality speaks for itself. Without triple checking the alcohol, I wouldn't have guessed its 60%. This is exceptional quality. And it has the flavor to go with it. Plenty of exotic tropical fruits, pineapple, mango, dates and baked figs stood out to me. Next on my list is the Dead Sea"
